BEEF CUTLETS
Take ¾ lb. cold beef, ½ onion, 2 tablespoonfuls butter, breadcrumbs, 2oz. fat bacon, 2 eggs (yolks only), 1 ½ tablespoonfuls gravy, ½ teaspoonful herbs.
Mince beef, bacon, and onion, and mix smooth with egg yolk, gravy, herbs, salt and pepper to taste. Shape into cutlets, dip in melted butter, and dredge with flour. Leave for an hour in a cool place, then dip in the other yolk, then in the breadcrumbs. Fold each cutlet in greased paper and bake for half an hour in a moderate oven.
