Beet Salad
From 1911:
When you have beets don’t throw out the leaves.
Carefully pick them over, cut off stems, wash well and boil in plenty of salted water about an hour.
Drain, cut up, add butter, oil and vinegar and a little sugar.
They are fine, cold, the next day, as salad.
