BEETROOT JAM
Take 6 bunches of beet, 4 lemons, 3 lb. sugar, ¼ lb. almonds, and 1 oz. of ground ginger. Peel and cut up the beetroot, slice the lemons, bleach and quarter the almonds, and cover all with water. Put it on the fire and, when boiling, add the sugar and ginger. Cook till nice and thick.
