Brain Cutlets
From 1922:
Take 3 sets of brains, and soak in strong salt and water for an hour. Drain, and put in saucepan on the fire in fresh water. Bring to a boil, then strain, and chop finely; add 1 cupful of breadcrumbs, 2oz. butter, finely chopped, parsley, and a little grated lemon rind, season to taste; moisten with beaten eggs and milk together; fry a tablespoonful at a time in boiling fat; fry a few rashers of bacon, and serve with the cutlets.
