EGG SANDWICHES
Hard boiled eggs, chopped finely, and seasoned with pepper and salt, or with a sprinkling of chopped parsley, make a very good sandwich. The addition of a little chopped olive is liked by many people, or shredded lettuce may be used with the egg. Soft boiled eggs, seasoned with pepper, salt, and vinegar, and beaten till the white has broken finely, also make an appetizing sandwich. Some breadcrumbs stirred into the egg may be used to thicken it sufficiently to spread properly on the bread and butter. Brown bread may be used for these sandwiches. Either hard or soft boiled eggs may also be seasoned with a little curry powder, which should be baked in the oven for about ten minutes before adding it to the egg.
