French Potato Omelet
Peel potatoes, wash them, dry with a clean towel, cut them in round slices not too thick, a good size piece of butter is necessary to brown them on both sides. Beat as many eggs as you need according to the size of the family; add parsley chopped fine, salt, pepper and a little milk; mix well. When potatoes are cooked pour this mixture all over them, picking with a fork here and there; if needed slip a little butter under it in the middle; watch very closely so it does not burn. Serve hot. Very good for breakfast.
