Green Pea Soufflé
From 1911:
Mash a can of peas with 2 tablespoonfuls of melted butter and salt to taste.
Put with them a pint of milk and 3 beaten eggs, season to taste with salt and pepper and after beating hard, bake, covered, in a well-greased pudding dish for twenty minutes.
Do not have the oven too hot at first.
Uncover, brown lightly and serve at once.
