HOT MEAT MOULD
This is a tasty dish, and should there be any over it is an excellent filling for sandwiches when cold. Take a little more than ½ lb. minced meat and a few breadcrumb, and mix with a little good gravy or raw eggs. Season rather highly with pepper, salt and mace, and put into a buttered basin. Press it in tightly and cover with a paper tied on securely. Steam for an hour and turn out. Make a good white sauce, and while it is hot pour all over the meat. Boiled carrots look very nice placed round the dish. Serve mashed potatoes with it.
