Lettuce Salad
Place two tablespoons best Italian olive oil, two tablespoons vinegar, salt and pepper, in a large bowl. Beat well with a silver fork, then add the green onions and lettuce leaves that have been shaken in a towel and broken in two (do not cut leaves, as it bruises them).
Then with your hands turn the leaves gently over and over until the oil is thoroughly distributed over the leaves and serve immediately.
