Mock Turkey and Tongue Paste

A very good, inexpensive substitute for the above is made as follows: Take some lean, cold roast beef, pass it through a mincing machine, then pound well in a mortar, adding a little oiled butter, pepper, salt and a pinch of powdered cinnamon. Press into small jars, and pour some clarified butter over the top. It is so disguised that it has all the flavor of the aforesaid “turkey and tongue.”
