Orange Roley-Poley
Take 3 oranges (peeled and sliced), 2oz. sugar, 3 teaspoonfuls breadcrumbs. ½ lb. suet, and flour for crust. Crush the oranges in a pulp with a fork, mix in breadcrumbs and sugar; roll out the crust into a lone strip and spread with the mixture. Rinse pudding-cloth in boiling water and sprinkle with flour; tie up pudding and plunge in boiling water and cook for 2 ½ hours. Serve with a sauce made by melting 3 tablespoonfuls of marmalade in 6 tablespoonfuls of water; pass through a sieve to keep back the peel; heat the liquid, and pour round the pudding.
