POTTED TOMATO PASTE
Take 3 ripe tomatoes, 1 egg; ½ oz. butter, 2 oz. cheese, 4 oz. breadcrumbs, 1 small onion chopped small, and salt and pepper to taste. Peel the tomatoes and cut them up, put them into small pan with butter and onion. When tender, mash smooth and add egg. Stir quickly until the preparation becomes thick, add cheese and breadcrumbs last. After the pan has been removed from the fire, turn paste into a pot and pour over it some melted butter.
