1 ¼ lb. of flour, 1 lb. sugar, 1 lb. butter, 13 eggs, 1 lb. sultanas, 1 lb. currants, ½ lb. finely sliced candied peel, 2 teaspoonfuls cream of tartar, 1 teaspoonful baking soda, a little nutmeg, 1 teaspoonful of mace, a little brandy. Beat the butter and sugar to a cream, keep the whites of 3 eggs back for icing, beat the rest and add to the butter and sugar; next add the flour and fruit, and the brandy last. Bake in a slow oven for three hours.
