Real Gingerbread Sold at English Fairs
Take 4 oz. butter, rub into 2 lb. flour, ½ lb. brown sugar, 2 oz. ground ginger, ½ oz. ground caraway seeds; then mix to this 2 lb. treacle and 3 well-beaten eggs, and last of all ½ oz. carbonate soda dissolved in a small cupful of warm water. Stir the whole briskly together; well grease a shallow tin, or two tins, and half fill, as this gingerbread will rise high and be very light and good. Put into a moderate oven and leave for 1 ½ hours. When cold, cut up into thick squares and you will have delicious ginger bread.
