ROLY-POLY PUDDING
Take 1 breakfastcupful of flour, ¼ lb. suet, ¼ teaspoonful salt, 1 teaspoonful of sugar, ½ teaspoonful of baking powder, cold water, some nice jam or fresh fruit. Put the flour, salt, sugar and baking powder into a basin, shred the suet finely, chop it, and rub in among the flour. Make into a paste with cold water, turn out on the board, and knead a little. Take about half of the paste and roll into a round piece. Have a bowl or pudding shape well greased, line neatly with the paste, put a spoonful of jam in the bottom (if fruit is put in, some sugar will require to be sprinkled over), then a little piece of paste. Repeat this till dish is filled. Turn the edges in neatly, wet, and cover neatly with a round of paste. Cover with a greased paper, and steam gently for 2 hours. Turn out and serve hot.
