It is said this will make an angel of a cross man.

Grate the rind from two lemons, cover with one quart of boiling water, add four ounces of candied ginger root, cut in small pieces and let stand closely covered for 10 minutes; then strain and add the juice of four lemons and two cups of sugar. When cold strain again and freeze to a soft mash. Serve garnished with preserved ginger.
