TRIPE STEW
From 1918:
1 pound tripe, cut in dice
3 cupful water
2 green peppers, chopped
3 onions, chopped
1 tomato, chopped
½ teaspoonful salt
1/8 teaspoonful pepper
1/8 teaspoonful paprika
Mix all together and cook slowly for one hour.
Serve with boiled rice or macaroni.
This dish, which costs 26 cents, will serve four persons. It can be used when we want to cut down our meat bills. Tripe can be bought at 15 to 18 cents a pound, and, of course, is very reasonable in comparison with other meats. Also, there is no waste.
