Wilted Lettuce
From 1911:
Wash and break into small pieces two large heads of lettuce. Put into a large frying pan ½ pound of salt pork cut into dice. Fry brown.
Beat 1 egg and 1 teaspoonful of flour together, add 1 pint of vinegar mixed with water and diluted to suit your taste. When the pork has browned, stir into the frying pan the rest of the ingredients, excepting the lettuce, and bring to a boil.
Finally, put in the lettuce and cook, stirring with a fork, until the lettuce is wilted.
